Ingredients:

  • 400 g Tenderloin
  • 1 Shallot
  • 4 Pickles
  • 4 Piparras (mild Spanish green chili peppers)
  • Whole-grain Mustard
  • Hot Sauce (Tabasco/Sriracha)
  • Soy Sauce
  • Egg Yolk
  • Extra Virgin Olive Oil (AOVE)

Finely chop the tenderloin, always using a knife.

Finely chop the shallot, pickles, and piparras as well.

Add everything to a bowl, and let’s move on to the seasoning. A tablespoon of whole-grain mustard, another of the piparra pickling liquid, hot sauce to taste, and a splash of soy sauce will enhance the flavor.

Add the egg yolk, and while drizzling olive oil in a thin stream, stir vigorously to emulsify the mixture.

Toast a brioche bun with butter and fill it with the mixture.

Presentation

Toast the brioche with butter and serve it with the tartare well chilled for contrast. Garnish with chives, flaky salt, and pepper. Pair with crispy straw potatoes or dressed arugula. For a gourmet touch, add grated truffle or trout roe. Success guaranteed!
