Garlic soup

Ingredients:
- 125g of stale bread
- 1L of water or chicken broth
- 7 cloves of garlic
- 1 tablespoon of paprika
- Salt to taste
- Extra virgin olive oil
- Optional: a little chili pepper

Peel the garlic cloves and slice them thinly. |

Cut the bread into slices that are not too thick. |

Heat a drizzle of oil, add the garlic, and when it starts to smell fragrant but before it browns too much add the tablespoon of paprika and stir. |

Add the water or broth and season with salt to taste. |

At this point, you can cover and cook over low heat for 20 minutes, or leave it uncovered and bake at 180°C (356°F) until a crust forms on top, ideally for about 2-3 hours. |

Presentation
For an irresistible presentation, serve the soup piping hot in earthenware bowls to retain the heat. Drizzle a bit of extra virgin olive oil just before serving and, if desired, garnish with a pinch of paprika or fresh herbs. Pair it with a poached egg or some melted cheese for an extra touch of flavor. Enjoy!
