Garlic soup

Ingredients:

  • 125g of stale bread
  • 1L of water or chicken broth
  • 7 cloves of garlic
  • 1 tablespoon of paprika
  • Salt to taste
  • Extra virgin olive oil
  • Optional: a little chili pepper

Peel the garlic cloves and slice them thinly.

Cut the bread into slices that are not too thick.

Heat a drizzle of oil, add the garlic, and when it starts to smell fragrant but before it browns too much add the tablespoon of paprika and stir.

Add the water or broth and season with salt to taste.

At this point, you can cover and cook over low heat for 20 minutes, or leave it uncovered and bake at 180°C (356°F) until a crust forms on top, ideally for about 2-3 hours.

Serve and enjoy!

Presentation

For an irresistible presentation, serve the soup piping hot in earthenware bowls to retain the heat. Drizzle a bit of extra virgin olive oil just before serving and, if desired, garnish with a pinch of paprika or fresh herbs. Pair it with a poached egg or some melted cheese for an extra touch of flavor. Enjoy!
