CHICKPEA TIKKA MASALA

Ingredients:
- 400 ml coconut milk
- 400 ml water
- 3 cloves of garlic
- 1 onion
- 2 carrots
- 1 Tbsp. of tomato paste
- 2 pear tomatoes
- 1 sweet potato
- 1 Tbsp. tikka masala spices (also known as chicken masala)
- 300 g cooked chickpeas

Preparation: step by step

Dice the garlic and the onion, and cut the carrots in half and then cut them into slices. |

Lightly fry the vegetables for 5 minutes in a non-stick pan. |

Add the peeled tomato that has been cut into cubes, the tikka masala spices and the tomato paste and cook it for 5 more minutes. |
4 | Cut the sweet potato into cubes and add it to the pan together with the coconut milk and the water. |
5 | Put the lid on and let it cook on medium heat for 30 minutes. |

Finally, add the chickpeas and mix. |
7 | Note – If the sauce is not thick enough, take the lid off and carry on cooking for 5-10 minutes more. |
8 | Serve hot and enjoy! |
Presentation
- Ideal side dish: Serve the Chickpea Tikka Masala on a portion of basmati rice in a deep dish or bowl. Put a tablespoon of natural yogurt on top of the chickpeas and sprinkle on fresh chopped coriander for decoration.
